Spices and Grains

 Saunf - also called as fennel seeds.they are aromatic, asthma, bronchitis, colic disease, food poisoning and motion sickness.


Asafoetida - Very much useful in cooking especially in South Indian cooking. This is also helpful in digestion.


Bay Leaf - Used in Pulav, Biryani, some gravies(masala gravy). This is to add the flavor to the dish.


Cardamom - is used in sweet dishes. This also adds the flavor to the dish. Mostly used in Southern India. 


Cinnamon - this is used to control blood sugar. this is an anti clotting action. Used in Pulav or Biryani's.


Cloves - to treat  respiratory and digestive problems. helpful in stomach ulcers and avoids vomiting. acts as an antiseptic(for example used for mouth ulcers) and anesthetic. 


Corainder seeds - used as seeds as well as powder form. an appetizer and useful in nervous system. 


Cumin seeds - helpful in digestion, and cures headaches, and nausea. 


Ginger - to relieve sore throats, and colds.


Mustard seeds - used as a seasoning mostly in south indian cooking. it gives a hot flavor when it splutters in hot oil. People say that it will create hunger.


Red chillies - Red chilies are used in indian cooking as one of the main spice.


Saffron - used as a seasoning and coloring agent.


Tamarind - used as a souring agent in indian lentil dishes, curries and chutneys, where its flavor is more authentic than vinegar or lemon juice. It is a mild in digestion. 


Turmeric Powder - used in rituals of the hindu religion. used as an antiseptic. asian cosmetic applied to impart a golden glow to the complexion. 


Grains 


Channa Dhal or Bengal gram dhal - low glycemic index.


Kabuli Channa - or Chick Peas(white) - good source of protein, can lower bad cholestrol, stabilise blood sugar.


White Karamani or black eyed beans - rich in fibre, help in reducing blood pressure.


Moong/ Moong dhal - rich in protein, easy to digest.


Kidney Beans  or Rajma - lowers the cholestrol, and blood sugar level, help memory, energy booster, fat free protein.


Toor dhal - high in protein, has vitamin A and C.


Urad dhal - comes in 2 colours(white and black). rich in protein and iron. good for haemoglobin count. used in low fat diets.
